Smoked Salmon

Here's my basic setup.





This is the smoker im using, its a steamer pan type.





The hot coals are in the bottom pan, and hickory wood chips and water are in the second pan(up). Actually im burning hickory chunks on the charcoal I started the thing with. So theres hickory chips in the water-pan, and charcoal clinkers with hickory chunks of wood on top of that. Generally I add 7 hickory chunks per 45 minuites. For 5 hours or so, filling the water pan once about midway.


Heres what the Salmon looks like about an hour into it.





I maranad the salmon for about 4hrs in the re-fridge with this, a honey/teriaki 30 minuite maranaid(sp?).














I will post a new pic,(of the salmon fillets) when I pull them off about 12:00 tonite, in like about 2.45 hrs from now.

Hi Todd,


I plan on sticking this stuff in the fridge as soon as its ready. That way it will last for a week or more. Enjoy the pics, This is about an hour and a half before there ready to come off. I supose taste testing begins sometime around 1 o'clock this morning. I absolutly love this stuff on an toasted onion bagel topped with cream cheese.


in a little while I'll snap some pic's of how the fillets look when they come off the smoker. enjoy...

For some reason the last few are getting to be mean lol.  I just worked 12 hours and now I want salmon but there is no where that has any good salmon around here.


Hmm what to eat?

When I saw the picture of your cat, I half expected the following pictures to be of the cat grabbing the salmon and high-tailing it for a good feast!

I need a digital camera that way I could have done pics of the 2 days of slotering the 8 deer.  Me and my g/f over the thanksgiving vacation went out to the farm and did our target practice and too out 8 deer.  We got 6 doe and 2 bucks.  I now have 3 deep freezes part way full.  I still have to reorganize and unplug one (I plug in the third for quicker cooling.


But I'm thinking having you'll look at all that meat would make a few people jealous.  Anyone in VA that needs some meat you need to let me know.  I'll do all the work if you pull the trigger.  I get 1/2 the meat lmfao.  No I did not say hunting but it's more like target practice.  You hit a cow and then I will have a lot more work to do.  I do use a "tree stand" John Deer front end loader (6615).

You ain't had smoked salmon till you've had CHERRY smoked salmon...MMmmm....


That do look good though.


BTW...I have that exact same smoker, and I've found that covering it with a box helps maintain/regulate the heat.

Thanks for all the great replies everyone. I really enjoy smoking stuff (with the smoker). Its a fun process and generally gives an excuse to play with fire on the back porch for 8hours at a time :)


 Id like to smoke some stingray fillets. Ive done swordfish steaks, they come out awsume. But the marinade process is a little different. Generally that fish is marinaded(soaked) for 8 hours in brine(saltwater) and Old Bay seasoning. Always marinade in the fridge.(rinse after w/fresh water) Amberjack fish comes out the best this way and need's like 8 hours to smoke.


I did not rinse the honey/teriaki marinade from the salmon before I threw it on the smoker. 3 to 6 hours smoke time is the range. Depending on leaks in the smoker. This was the first time I  used the tinfoil- and got actual smoke coming from the bottom. The last time the smoker did not work as well, without the tinfoil seal around the lid. In about 3 to 4 hours the salmon will take on the strong smoked appearence. Id recommend 3 1/2 hours at the most for salmon if you managed to get things working as good as I had going with this batch.

 Most likely the next thing I smoke will be some short ribs. Ive heard some steak rub is all that these need for seasoning. Barbaque sauce after smoking. I dont think theres any other way to do these. Last ones I boiled and grilled were real tough. Betcha in the smoker for 3 hours they would be tender.


 Im kinda curious how a pork-shoulder picnic cut of meat would come out, there pretty big like 8lbs or so (and only like 10bucks). Could make some nice cuban sandwiches with that, for a week. yum...


I happy with how my machine is smoking :)  probably veture off into the Beef territory this weekend.


Just finshed some smoked fish-dip.

Here's another pic of the cat, his name is thomas, he showed up at my parents house in 1989, we've been taking care of him ever since. He just had some salmon. He recently moved to my house, seems to be adjusting well.

In the back of my mind as I posted the pics of thomas the cat, I figured somebody could make a comment to that effect. Considering how I saved this cats life as a kitten, I would never consider such a thing.


I especially like the idea of the cat running with a big chunk of salmon fillet. :)


Actually this cat doesnt eat any cooked food. He prefers his fish raw. so I cut off some scraps and gave them to him before, I put the fish on the smoker.


I got somethin going on with smoker right now as a matter of fact. Short-ribs. Got a good deal on 4.5 lbs for like 10bucks today. Trust me, they are looking nice. I have some pics of how the process is going, incase anybodys interested.

Alright, I got the barbeque sauce on, but found these are still pretty rare, they have not shrunk that much(the meat).





According to this indicator there just sarting to cook, but have been on already for 4 hours.


No matter, I will cook them as long as I have too. Ive got plenty of wood, can smoke them as long as 10 hours if need be. The smoker is always warm to the touch never hot. I just want to see some shinkage, like what happens to a pot-roast when its done. :)
